π Ingredients (Serves 4)
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt & black pepper, to taste
- 1 tsp paprika
- 1 tsp Italian seasoning
- 3 cloves garlic, minced
- ΒΎ cup unsweetened almond milk (or light cream)
- ΒΌ cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tbsp butter
- Optional: red pepper flakes

- Season the chicken:
Sprinkle salt, pepper, paprika, and Italian seasoning on both sides of the chicken breasts. - Sear the chicken:
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5β6 minutes per side, until golden and cooked through. Remove from the pan and set aside. - Make the sauce:
In the same pan, add butter and garlic. SautΓ© for about 30 seconds, just until fragrant. Pour in the almond milk, stirring and scraping up any browned bits from the pan. - Add cheese & spinach:
Stir in the Parmesan cheese until the sauce begins to thicken. Add the spinach and cook until wilted. - Combine & simmer:
Return the chicken to the pan, spooning the sauce over the top. Simmer for 3β5 minutes, letting the flavors meld and the chicken get coated in the creamy sauce. - Serve:
Transfer to plates and garnish with red pepper flakes if you like a little heat.
