
Healthy Chicken Stir Fry
🍗 Chicken Stir Fry (Serves 3–4)
🧄 Ingredients
Chicken & Marinade
- 1 lb (450 g) boneless, skinless chicken breast or thighs, thinly sliced
- 1 tbsp soy sauce (low sodium preferred)
- 1 tbsp cornstarch
- 1 tsp sesame oil
- ½ tsp black pepper
Vegetables (mix and match)
- 1 bell pepper (red or yellow), sliced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- ½ onion, sliced
- 1 cup snap peas or green beans
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced (optional but recommended)
Stir Fry Sauce
- ¼ cup soy sauce (low sodium)
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce (optional)
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tbsp honey or brown sugar
- 1 tsp sesame oil
- ½ cup chicken broth or water
- 1 tbsp cornstarch
For Cooking
- 2 tbsp vegetable oil or avocado oil

🔥 Instructions
1. Marinate the Chicken
In a bowl, mix chicken with soy sauce, cornstarch, sesame oil, and black pepper.
Let sit for 10–15 minutes (this keeps the chicken tender).
2. Prepare the Sauce
In a small bowl, whisk together all stir fry sauce ingredients until smooth.
Set aside.
3. Cook the Chicken
- Heat 1 tbsp oil in a large skillet or wok over medium-high heat
- Add chicken in a single layer
- Cook 3–4 minutes, stirring occasionally, until golden and cooked through
- Remove chicken from pan and set aside
4. Cook the Vegetables
- Add remaining 1 tbsp oil
- Add onion, broccoli, carrots, and snap peas
- Stir fry 3–4 minutes until crisp-tender
- Add garlic and ginger, cook 30 seconds until fragrant
5. Combine & Sauce
- Return chicken to the pan
- Pour in the stir fry sauce
- Stir constantly for 1–2 minutes until sauce thickens and coats everything
6. Taste & Adjust
- Add more soy sauce for salt
- Add honey for sweetness
- Add chili flakes or sriracha for heat 🌶️
