Healthy Chicken Stir Fry

🍗 Chicken Stir Fry (Serves 3–4)

🧄 Ingredients

Chicken & Marinade

  • 1 lb (450 g) boneless, skinless chicken breast or thighs, thinly sliced
  • 1 tbsp soy sauce (low sodium preferred)
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • ½ tsp black pepper

Vegetables (mix and match)

  • 1 bell pepper (red or yellow), sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • ½ onion, sliced
  • 1 cup snap peas or green beans
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced (optional but recommended)

Stir Fry Sauce

  • ¼ cup soy sauce (low sodium)
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce (optional)
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • ½ cup chicken broth or water
  • 1 tbsp cornstarch

For Cooking

  • 2 tbsp vegetable oil or avocado oil

🔥 Instructions

1. Marinate the Chicken

In a bowl, mix chicken with soy sauce, cornstarch, sesame oil, and black pepper.
Let sit for 10–15 minutes (this keeps the chicken tender).


2. Prepare the Sauce

In a small bowl, whisk together all stir fry sauce ingredients until smooth.
Set aside.


3. Cook the Chicken

  • Heat 1 tbsp oil in a large skillet or wok over medium-high heat
  • Add chicken in a single layer
  • Cook 3–4 minutes, stirring occasionally, until golden and cooked through
  • Remove chicken from pan and set aside

4. Cook the Vegetables

  • Add remaining 1 tbsp oil
  • Add onion, broccoli, carrots, and snap peas
  • Stir fry 3–4 minutes until crisp-tender
  • Add garlic and ginger, cook 30 seconds until fragrant

5. Combine & Sauce

  • Return chicken to the pan
  • Pour in the stir fry sauce
  • Stir constantly for 1–2 minutes until sauce thickens and coats everything

6. Taste & Adjust

  • Add more soy sauce for salt
  • Add honey for sweetness
  • Add chili flakes or sriracha for heat 🌶️
